Ingredients

1 medium tomato, seeded, finely diced (about 1/2 cup)
1 medium shallot, finely diced (1/4 cup)
2 tablespoons finely chopped fresh coriander
2 tablespoons fresh lime juice
1 habanero chilli seeded, very finely chopped
Fine sea salt, to taste
Rock salt
Crushed ice
32 fresh oysters on the half shell

Instructions 

To make mignonette

1. In a small bowl fold tomato, shallot, coriander, lime juice, chilli together
2. Season to taste with sea salt, and set aside
3. Serve the oysters with the remaining mignonette alongside
4. To serve sprinkle a generous handful of rock salt over a non-reactive platter
5. Arrange a layer of crushed ice over the salt
6. Sprinkle with another generous handful of rock salt
7. Combining the ice with salt helps prevent the ice from melting
8. Arrange oysters in shells on the ice nestling a bit so don’t jostle around and spill liquor
9. Spoon 1 teaspoon of the mignonette over each oyster
10. Transfer the remaining mignonette to a small serving bowl
