Ingredients

1 cup baby rocket leaves
1/4 cup (40g) pine nuts, toasted
1 garlic clove, crushed
1 lemon, zested, juiced
1/4 cup (60ml) olive oil

Instructions 

To make rocket pesto
1. Process rocket pine nuts garlic and juice in food processor until finely chopped
2. With the motor running, gradually add oil in a thin, steady stream
3. Taste and season with salt and pepper
4. Place rock salt on a large serving platter
5. Top with the oysters
6. Spoon pesto over oysters and top with the lemon zest
