Ingredients

2 spring onions, thinly sliced lengthways
3 small tomatoes, seeded, finely chopped
3/4 cup roasted red capsicum, finely chopped
1 long red chilli, seeded, finely chopped
2 tablespoons coriander, finely chopped
1/4 cup (60ml) lime juice
1 1/2 tablespoons olive oil
3 teaspoons tequila (optional)
1 1/2 teaspoon caster sugar
1/2 teaspoon Tabasco Chipotle Pepper Sauce
Ice, to serve
36 oysters, shucked

Instructions 

1. Place spring onion in a bowl cover with iced water
2. Set aside for 5 mins to curl. Drain
3. Combine tomato, capsicum, chilli and coriander in a bowl
4. Stir lime juice, oil, tequila, sugar and Tabasco  until sugar dissolves
5. Season and add to the tomato mixture and stir to combine
6. Place ice in a serving dish. Arrange the oysters on top
7. Spoon over the tomato mixture and top with the spring onion curls
