50mls dark agave nectar (available in the health section)
1/2 cup water
1/2 cup fresh lime juice
1 tablespoon of tequila
500g ice
1/4 cup mint leaves, finely sliced
12 shucked oysters


1. Mix agave syrup and water together
2. Add lime juice and tequila (if using) and stir
3. Place in high powered blender with half the amount of ice
4. Blend until slushy forms add remaining ice and blend till sorbet forms
5. Alternatively if you don't have a high powered blender
6. Place margarita mixture in shallow baking tray freeze
7. Then scrape frozen margarita mix with fork to make a granita
8. Serve by placing a few teaspoons of sorbet on oysters with a little sliced mint
