4 spring onions, thinly sliced lengthways
2 tablespoons pickled ginger
1 tablespoon light soy sauce
1 teaspoon sesame oil
1 tablespoon sesame seeds, toasted
4 dozen oysters
Rock salt to serve


1. Place spring onion in a medium bowl of iced water.
2. Set aside for 5 mins to curl
3. Divide pickled ginger and spring onion among remaining oysters
4. Combine soy sauce and sesame oil in a small jug
5. Drizzle over the oysters and sprinkle with sesame seeds
