Ingredients

2 cups vegetable oil for frying
Shucked oysters and juice
1 beaten egg
Salt to taste
1 teaspoon ground black pepper
1 teaspoon Old Bay Seasoning
1/2 cup dry pancake mix
Add all ingredients to list

Old Bay Seasoning (if prefer to make your own)
1/4 cup ground bay leaves
1/4 cup celery salt
2 tablespoons dry mustard
4 teaspoons ground ginger
4 teaspoons ground black pepper
4 teaspoons sweet paprika
2 teaspoons ground nutmeg
2 teaspoons ground allspice
2 teaspoons ground white pepper
2 teaspoons ground cloves
1 teaspoon ground mace
1 teaspoon ground cardamom
1 teaspoon crushed red pepper flakes
Grind all ingredients together (makes about 1 cup)
Store in an air tight container

Instructions 

1. Heat oil in a skillet over medium high heat to 350 degrees F (175 degrees C)
2. Combine oysters, oyster juice, egg, salt, pepper and Old Bay Seasoning
3. Gently stir in pancake mix to make a thin batter
4. Spoon oysters one at a time into hot oil
5. There should be just enough batter surrounding oysters to coat them but it should not be too thick
6. Fry until golden brown on both sides
7. Drain and serve
