Ingredients

60g butter
2 slices finely chopped bacon
8 finely chopped English spinach leaves
2 tablespoons chopped parsley
2 tablespoons finely chopped spring onions
1/3 cup dry breadcrumbs
Drop of tabasco

Instructions 

1. Melt butter in a pan
2. Add bacon cook over medium heat until browned
3. Add spinach, parsley, spring onion, breadcrumbs and Tabasco
4. Cook 5 minutes until spinach is wilted
5. Top oysters with a spoonful of mixture
6. Place under preheated grill for 2-3 minutes until lightly browned
