30g butter
1tablespoon plain flour
2/3 cup hot milk
Salt and pepper
Pinch of cayenne pepper
1 tablespoon cream
24 oysters in shells
1/3 cup grated cheese
Paprika to sprinkle


1. Melt butter in a small saucepan
2. Stir in flour cook 2 minutes
3. Gradually add hot milk stir over medium heat until mixture thickens and boils
4. Add salt and peppers to taste, simmer gently 2 minutes stirring occasionally
5. Stir in cream remove from heat put plastic wrap over to prevent film forming
6. Drain juice from oysters and add to sauce
7. Arrange oysters on an oven tray
8. Top with sauce and sprinkle with cheese
9. Grill 2 -3 minutes or until lightly browned sprinkle with paprika and serve
