Ingredients

500g Orange Roughy fillets, rinsed and patted dry
3 teaspoons salt
1 teaspoon pepper
3 tablespoons plain flour
2 eggs

Instructions 

1. Salt fish on all sides
2. Beat eggs with any remaining salt in a bowl
3. Put flour in a bowl next to egg next to the stove
4. Heat up a lightly greased pan over medium heat
5. Dip each fish portion into flour to coat
6. Dip into egg mixture, and place in frying pan
7. Fry fish 2-3 minutes and turn
8. Cook another 1-2 minutes until batter becomes a light yellow in colour
Note: If you find it too salty, you can decrease the amount of salt to 1-2 teaspoons
