1 teaspoon olive oil
3 spring onions, chopped
1 cup (250ml) dry white wine
1 (440g) tin whole peeled tomatoes with liquid, chopped
4 fillets Orange Roughy
1 tablespoon chopped fresh basil
1/4 teaspoon ground black pepper
1 pinch dried thyme, crushed
1 pinch dried rosemary, crushed
1/4 cup sliced black olives, drained
125g crumbled feta cheese


1. Heat olive oil in a medium frypan over medium heat
2. Stir in spring onions cook until tender, 5 to 10 minutes
3. Mix white wine tomatoes and spring onions bring to a boil
4. Place Orange Roughy fillets in white wine mixture
5. Season with basil, pepper, thyme and rosemary
6. Reduce heat simmer 15 to 20 minutes until fish is easily flaked with a fork
7. Remove fish fillets from frypan
8. Sprinkle fish fillets with black olives and feta cheese
