Ingredients

750g pack frozen potato wedges
1/2 pineapple, peeled, finely chopped
1/2 bunch coriander, chopped
2 spring onions, finely chopped
1 Lebanese cucumber, deseeded, fine chopped
4 Orange Roughy fillets about (1 kg)
1 tablespoon olive oil
2 limes, juiced
1/3 cup sweet chili sauce

Instructions 

1. Cook potato wedges according to pack

Make salsa
1. combine pineapple, coriander, spring onions and cucumber in a bowl
3. Season fish to taste with salt and pepper
4. Cook fish in hot oil in non-stick fry pan for 3 to 4 minutes each side
5. Cook until cooked to desired taste
6. Top fish with salsa
7. Pour over combined sauce and lime juice
8. Serve with wedges
