Ingredients (serves 4)

800 grams squid or calamari
Mixed salad leaves
1punnet cherry tomatoes
2 Lebanese cucumbers, sliced
1 small red onion, finely sliced
1 cup of coriander leaves
2-3 garlic cloves, finely diced
1-2 long red chili, finely
2 teaspoons minced ginger
2 tablespoons vegetable oil

4 tablespoons lime juice
2 tablespoons fish sauce
2-3 teaspoons palm sugar (alternately use caster sugar)
1-2 long red chili finely sliced


1. Clean squid, lightly score inner surface and cut into pieces or rings
2. Mix garlic, ginger and oil in a bowl, add squid and marinate for 10 minutes
3. Combine lime juice, fish sauce, palm sugar and chili in a bowl, set aside
4. Cook squid in a very hot fry pan for 2-3 minutes until just cooked
5. Set aside and allow to cool slightly
6. Combine squid salad leaves, tomatoes, cucumber, red onion, coriander in a bowl
7. Drizzle over dressing toss well and serve
