Ingredients

4 Flathead fillets about 185g portions
1 egg (lightly beaten)
2 tablespoons flour (seasoned with salt and pepper)
2 tablespoons olive oil
300g baby spinach
280g rice (90-second microwave)
Lemon wedges (to serve)

Instructions 

1. Dip fish into egg
2. Coat in flour, shaking off any excess
3. Heat oil in a large non-stick skillet on high heat
4. Cook 2-3 mins each side, until golden and cooked through
5. Cook spinach in microwave or skillet 2 mins
6. Cook until just wilted and Season
7. Cook rice according to package directions
8. Serve fish with spinach, rice and lemon wedges
