Ingredients

700g Flathead fillets skinned and boned
1/2 cup plain flour
3 eggs lightly beaten
2 cups panko breadcrumbs
Vegetable oil for shallow frying
Shoestring fries and lemon wedges to serve
Tartare Sauce
2/3 cup whole egg mayonnaise
1/4 cup low fat sour cream
1 tablespoon drained chopped capers
1/4 cup finely chopped baby cornichons
1 shallot finely chopped
Salt and pepper to taste

Instructions 

1. To make sauce combine all ingredients in a medium bowl and mix well
2. Cut fillets crossways into three equal pieces
3. Dust in flour seasoned with pepper and salt shake off excess
4. Dip in eggs and toss in panko crumbs pressing on firmly
5. Heat enough oil in a large deep pan for shallow frying until hot
6. Add fish in batches and fry 2-3 minutes each side until golden, cooked through
7. Drain on absorbent kitchen paper
8. Serve fish with shoestring fries, lemon wedges and Tartare sauce
