500ml vegetable oil for deep frying
800g Flathead fillets cut into 80g pieces
2 tablespoons unbleached wheat flour
1 green onion (shallot) julienned to garnish
Beer Batter
1/2 cup larger or soda water
1/2 cup unbleached wheat flour
1/2 cup ice cubes
Dipping Sauce
1/2 cup rice wine vinegar
1/3 cup sugar
1 1/2 tablespoons fish sauce
1 1/2 large red chilli sliced on the diagonal


To make sauce
1. Place vinegar and sugar in a saucepan bring to the boil
2. Reduce heat simmer uncovered 15 min until liquid is syrupy, reduced by half
3. Remove from heat and stir in fish sauce and chilli set aside
4. Combine batter ingredients in a bowl with a spoon rather than a whisk
5. Add more flour if it looks runny
6. Stand at room temperature until ice half melts
7. Heat oil in a wok until surface shimmers
8. Lightly coat fish in flour one piece at a time, dip in batter to coat draining excess
9. Add fish to a wok in batches deep fry 4 minutes
10. Fry until golden and just cooked through drain well on paper towel
11. Arrange fish on a platter and garnish with shallots and serve with dipping sauce
