4 gurnard fillets
1/2 red onion, finely chopped
1 clove garlic, crushed
3 tablespoons of olive oil
55g panko breadcrumbs
30g sun blush tomatoes, chopped
1 tablespoon fresh chopped thyme
Sea salt and freshly ground black pepper, to taste
1 red pepper, deseeded and roughly chopped
1 yellow pepper, deseeded and roughly chopped
1 courgette, trimmed and roughly chopped


1. Preheat the oven to 200% C
2. Gently fry onion and garlic in olive oil for five minutes, stirring occasionally
3. Stir in breadcrumbs, tomatoes and thyme cook one minute
4. Season and leave to cool
5. Toss peppers and courgette in the remaining oil and place on a baking sheet
6. Bake for ten minutes
7. Lay fillets over roasted vegetables and sprinkle crumb mixture on top of fish
8. Bake for 12-15 minutes until the fish is cooked and crumbs are golden
