6 gurnard fillets
8 cloves of garlic
2 red chillies
50g fresh ginger
1/2 bunch of coriander
50ml Peanut oil
20ml Soy sauce
1 lime
Sea salt
Freshly ground black pepper


1. Preheat the oven to 200% C
2. Cut fish into 2 inches by 1 inch in size portions
3. Peel the ginger and roughly cut into strips
4. Peel and crush the garlic
5. Cut the chilli into rings
6. Take two squares of aluminium foil place one on top of the other
7. Place Gurnard in the centre of foil add a little garlic, ginger and chilli
8. Add a drizzle of peanut oil, season with salt and pepper
9. Finish with few sprigs of coriander
10. Seal foil around fish crimp edges tightly so no juices escape from the parcel
11. Repeat until you have used all of the fish
12. Transfer parcels to oven and bake 5 to 7 minutes
13. Once removed from oven, unfold foil add squeeze of lime, a dash of soy sauce
14. Take care when opening the parcel as the steam inside will be very hot
15. Serve with juices in the parcel
