Ingredients

600g Flake portions cut into bit size slices
Enough oil to fry fish fillet
Marinade
1 teaspoon salt
1 teaspoon sesame oil
1/2 teaspoon pepper
1 egg
2 tablespoons of cornflour

Sauce [Mix all together]
5 tablespoons plum sauce
3 tablespoons Thai Chilli Sauce
2 teaspoons fish sauce or 1 teaspoon fish sauce + 1 teaspoon light soy sauce
1 teaspoon sesame oil
1 tablespoon sugar to taste
100 ml boiled but cooled water

Garnish [All or any combination]
1/2 carrot - shredded
1 big onion - cut shreds
1 zucchini - shredded
Shredded spring onions or chopped coriander leaves
Roasted sesame seeds

Instructions 

1. Put shredded onions, carrots, zucchini and spring onions or coriander leaves in a bowl of cold ice water for 1-2 minutes
2. Drain off water in colander. Keep in refrigerator until later for use
3. Mix all sauce ingredients, except roasted sesame seeds until well combined season to taste set aside
4. Heat enough oil in wok and fry fish fillet in batches until golden and crispy at the edges place on serving plate
5. Spoon some sauce over fish and garnish with shredded vegetables.
6. Then spoon some sauce again on top and around the plate and sprinkle sesame seeds
7. Serve immediately while fish fillets are still crispy or sauce can be used for dipping
