Ingredients

1kg Flake or any mild white fish
1/2 cup panko crumbs
Zest of one lemon
2 tablespoons roughly chopped flat-leaf parsley
1/2 teaspoon kosher salt
1/4 teaspoon fresh black pepper
1 heaped tablespoon Dijon mustard
2 tablespoons + 1 tablespoon olive oil

Instructions 

1. Preheat the oven to 425% F 22o% C
2. Dry the fish with paper towel, and set in an ovenproof casserole dish
3. Coat on all sides with 1 tablespoon olive oil
4. Mix panko, zest, parsley, salt, pepper, mustard and 2 tablespoons olive oil
5. Mix until the panko is moistened
6. Press mixture on top of the fish with your hand, to form a thick coating
7. Bake for 12-15 minutes, depending on the thickness of your fish
8. Remove from the oven and let the fish rest for 5 minutes before serving
