500g crab
1 egg white
1 teaspoon cornflour
30ml vegetable oil
1/2 teaspoon salt
2 dried red chillies
2 cloves garlic, sliced
1 teaspoon fresh ginger, diced
1/2 teaspoon sugar
1 teaspoon black pepper
1 teaspoon rice wine


1. Clean the crabs and chop into smaller pieces
2. Place in a bowl with the egg white, salt and cornflour then mix well
3. Heat oil in a wok and stir fry crab until red
4. Remove with a slotted spoon, drain on paper towel
5. Add remaining ingredients to wok and stir fry 2 minutes
6. Return the crab to the wok and mix well, then serve
