Ingredients

Bream fillets

For the Broth
1 long red chilli, finely diced
3 cloves of garlic, finely diced
1 small brown onion, finely diced
1 small fennel bulb, finely diced
1 teaspoon chopped thyme
1 teaspoon fennel seeds
1 teaspoon cumin seeds
1 teaspoon dried oregano
1 teaspoon dried chilli flakes
325g can cherry tomatoes
1 cup white wine
1 cup fish stock
Salt and pepper to taste

For the Garnish
1 whole fennel, sliced
1 whole chilli, sliced
2 lemons
1/2 cup fresh picked herbs (parsley, mint, oregano, chervil, basil)
2 tablespoons white wine vinegar
2 roma tomatoes, de-seeded and sliced
Lots of good olive oil
Salt and pepper to taste

Instructions

For the Broth
1. Heat saucepan to medium heat
2. Lightly roast dried ingredients and transfer to mortar and pestle
3. Smash into fine powder
4. Using the same saucepan, sweat off garlic, onion, chilli and thyme
5. When the vegetables and thyme are slightly coloured, add white wine to deglaze
6. Reduce white wine until it’s almost completely gone and add fish stock and tomatoes
7. Add remaining roasted spices and simmer 20 minutes, season to taste
For the Garnish
1. Mix together chilli, fennel, lemon juice, tomatoes, vinegar and olive oil season to taste
2. Grill or pan-fry bream fillets
3. Heat broth, adding fennel and tomato mix
4. Pour hot broth into a bowl placing cooked fish on top
5. Spoon fennel and tomato mix over the fish
6. Garnish with herbs and more olive oil
