1/4 Cup mayonnaise
2 garlic cloves (crushed)
2 teaspoons fresh lemon juice
1kg calamari tubes (cut into rings)
1 cup seasoned plain flour
5 eggs lightly beaten with 1 cup water
5-6 cups fresh breadcrumbs
1/2 cup finely grated parmesan cheese


1. Combine mayonnaise, garlic and lemon juice, cover and chill
2. Toss calamari rings in flour, dip in egg mixture
3. Coat in combined breadcrumbs and parmesan cheese
4. Transfer to a plate cover and chill for 30 minutes
5. Preheat oven to 150%C or 130%C fan forced
6. Heat enough oil in deep fry pan to at least 2cm up sides or use deep fryer
7. Cook calamari in batches 1-2 minutes or until lightly golden
8. As calamari cooks transfer to a wire rack over a lined baking tray  
9. Place into the oven to keep warm, serve with prepared mayonnaise
