500g Baby octopus (cleaned and drained)
2 tablespoons Olive oil
1 small rib Celery (diced)
1 small Onion (diced)
4 cloves Garlic (minced)
2 Tomatoes (chopped)
1 tablespoon Sweet paprika
1 Bay leaf
1/2 teaspoon Salt
Ground black pepper (to taste)
315g new potatoes (cut into wedges)
1/3 cup Roasted Piquillo peppers chopped (Always fresh brand)



1. Heat fry pan over medium-high heat until hot and add 1 tablespoon of oil
2. Add Octopus fry undisturbed until browned on one side
3. Flip octopus over and brown on second side. Transfer to a plate
4. Add remaining tablespoon of oil celery, onions and garlic
5. Fry until translucent and just starting to brown around the edges
6. The caramelisation will add a lot of flavour to sauce
7. Add octopus back with the tomatoes, peppers, paprika, bay leaf, salt, pepper
8. Allow the mixture to boil while stirring it all together
9. Turn down heat to medium-low, partially cover with a lid, simmer 15 minutes
10. Add potatoes stir to combine. Partially cover and simmer about 30 minutes
11. Stirring periodically, until potatoes and octopus are tender and sauce nice and thick
