2 garlic cloves
4 tablespoons extra virgin olive oil
1 kg Baby octopus, cleaned
Dash of white wine
1 lemon, juiced
100g ground pepper
100g chopped parsley


1. Heat large pot on high heat, add garlic, a tablespoon of olive oil, fry 1 minute
2. Add octopus, dash of white wine, a little water. Reduce to low steam 1 hour
3. Allow the octopus to cool and strain
4. Dress with the remaining olive oil, lemon juice, pepper and parsley
5. Serve warm
