1kg cleaned baby octopus
1/2 cup (125ml) sweet chilli sauce
2 tablespoons lime juice
1 tablespoon salt-reduced soy sauce
2 garlic cloves, crushed
2 teaspoons grated fresh ginger
1  1/2 tablespoons finely chopped fresh coriander
2 tablespoons finely chopped unsalted cashews


1. Place octopus in a large saucepan of boiling water cook 1-2 minutes
2. Cook until almost cooked through, drain, refresh octopus under cold water
3. Place 1⁄3 cup sweet chilli sauce, juice, soy, garlic and ginger in large bowl
4. Add octopus, turning to coat and stand for 15 minutes
5. Combine remaining chilli sauce and 2 teaspoons water in a small bowl
6. Lightly spray barbecue or char grill pan with oil heat on medium-high heat
7. Remove octopus from marinade cook 2-3 minutes until tentacles charred
8. Transfer to a serving platter and sprinkle with coriander and cashews
9. Drizzle over chilli sauce mix and serve with rice
