1 kg calamari, squid or 600g cleaned tubes or rings
8 shallots cut into 3cm pieces
200 g snow peas, topped and tailed
2 garlic cloves, finely chopped
1 piece of ginger, peeled and cut into slices
1 cup chicken stock
2 tablespoons oyster sauce
1 teaspoon sesame oil
3 teaspoons corn flour mixed with 1 tablespoon of water
2 tablespoons of vegetable oil


1. Clean calamari, lightly score inner surface and cut into pieces or rings.
2. Heat vegetable oil in a fry pan on medium heat
3. Add snow peas, garlic, ginger and shallots, stir fry for 2 minutes
4. Add calamari and cook for 2 minutes
5. Add chicken stock, oyster sauce, sesame oil and corn flour mix, cook 1 minute
6. Serve with rice
