1kg octopus, cleaned
2 tablespoons olive oil
2 cups chopped onions
2 tablespoons chopped garlic
2 crushed bay leaves
250g chorizo sliced 1/4-inch thick
2 cups white wine
1kg fresh tomatoes, peeled, seeded chopped
500g new potatoes
1 litre of chicken stock
Pinch of crushed red pepper
2 tablespoons chopped fresh coriander
2 tablespoons chopped parsley
Salt and pepper


1. Submerge octopus in large pot of boiling water 5 minutes. Drain and let cool
2. Cut the tentacles and centre section into 2-inch lengths or chunks and reserve
3. In a large pot, add olive oil. When oil is hot add onions, garlic and bay leaves
4. Fry vegetables in the oil for 3 to 4 minutes, or until slightly wilted
5. Add the chorizo and continue to cook for 2 to 3 minutes
6. Deglaze pan with wine, bring liquid to a boil and reduce by half 1 to 2 minutes
7. Stir in tomatoes, season with salt, pepper add potatoes, reserved octopus, stock
8. Bring liquid to boil and reduce to a simmer, simmer stew for 2 hours on low heat
9. Stir in the crushed red pepper, fresh coriander and parsley
10. Season with salt and pepper
