1 kg clean baby octopus

2 crushed garlic cloves
1 tablespoon dried oregano
Salt and pepper to season
1/2 cup olive oil
2 tablespoons lemon juice
2 tablespoons red wine vinegar


1. Place octopus in a bowl with marinade refrigerate  2-4 hours or overnight
2. Drain octopus cook on a hot grill or fry pan 3-4 minutes turning frequently
3. Allow to cool slightly then serve on a salad with crusty bread

If using medium or large octopus place in a saucepan
Cover with equal quantities of red wine and olive oil
Simmer 30-45 minutes until tender then drain and marinate for 1 hour
