Ingredients

500g cleaned squid tubes
1/3 cup plain flour
3 teaspoons Cajun seasoning
2 ½ cups vegetable oil
Rocket leaves
Sliced long red chilli to garnish
Lime Garlic Mayonnaise
1 lime halved crossways
½ cup whole egg mayonnaise
1 clove garlic crushed
Salt and pepper to taste

Instructions

1. To make garlic lime mayonnaise Juice 1 half of lime and whisk in a small jug
2. With remaining ingredients cover and refrigerate
3. Cut along one side of each squid hood Score inside in a diamond pattern
4. Cut in half cross ways and then into 3cm thick strips
5. Heat oil in a large wok over medium –high heat 190%C
6. Combine flour and seasoning in a medium bowl season with salt and pepper
7. Divide Squid in four portions lightly dust with seasoned flour shake off excess
8. Deep fry portion at a time 2 minutes until cooked reheat oil between batches
9. Drain on absorbent kitchen paper
10. Serve immediately with reserved lime rocket and Lime garlic mayonnaise, garnish with chilli
