1kg cleaned squid hoods
3/4cup cornflour
2 1/2 tablespoons sea salt flakes
3 teaspoons coarsely cracked black pepper
Vegetable oil for deep frying
Lemon wedges to serve


1. cut along one side of each squid hood to open
2. Score inside of each in a diamond pattern and cut into 3cm thick strips
3. Combine cornflour, salt and pepper in a medium
4. Heat oil for deep frying 190%c, divide squid into eight portions
5. Lightly dust portion at a time in cornflour mixture, shake off excess
6. Add squid to hot oil deep fry about 1 minute until curls, golden brown
7. Drain on paper towel, repeat with remaining squid
8. serve immediately with tartar sauce

Tartar Sauce
1 cup whole egg mayonnaise
1 table spoon lemon juice
2 table spoons drained capers (finely chopped)
2 table spoons finely chopped gherkins
Salt and pepper to taste

Combine all ingredients in a small bowl and mix well, chill covered until ready to serve
