1.5kg medium sized squid tubes cut into 2cm rings
1/3 cup olive oil
1/3 cup lemon juice
1/4 cup torn fresh basil leaves
1 tablespoon crushed garlic
2 teaspoons cracked black pepper
1 tablespoon brown sugar
150g baby Asian greens
4 Roma tomatoes chopped
2 green capsicums chopped


1. Place squid into a non-corrosive dish
2. Combine olive oil, lemon juice, basil, garlic and pepper
3. Pour 1/3 of mixture over squid cover and refrigerate 10 minutes
4. Add sugar to remaining marinade for the dressing
5 .Drain marinade from squid and discard
6. Preheated lightly greased flat plate grill
7. Grill squid over high heat 2-3 minutes tossing frequently
8. Place into a large bowl, add remaining ingredients
9. Add dressing and toss to combine
10. Serve topped with black olives and fresh basil leaves
