1 Tablespoon olive oil
1 onion peeled roughly chopped
1 carrot diced
2 cloves garlic peeled crushed
1 fennel bulb trimmed cut into 1.5 cm cubes
400g can chopped tomatoes
200ml white wine
600ml hot fish or vegetable stock
4 thick skinless cod portions cut into bite size chunks
400g green prawns peeled deveined with tails intact
4 tablespoons chopped flat leaf parsley


1. Heat oil in large saucepan, add onion, carrots and garlic
2. Cook over low-medium heat stirring for 5 minutes
3. Stir in fennel, tomatoes and wine pour over stock and bring to the boil
4. Simmer for 20-25 minutes stirring occasionally
5. Add fish and prawns. Bring to the boil
6. Simmer 5-6 minutes until fish and prawns are cooked
7. Ladle into bowls and sprinkle with parsley
8. Season and serve
