Ingredients

3 cups raw coleslaw vegetables
1kg Ocean Perch fillets, cut into serving size
1/3 cup sweet chilli sauce
2 teaspoons sesame oil
2 tablespoons oyster sauce
1 tablespoon grated ginger
1/2 colourful bell pepper, thinly sliced

Instructions

1. Make an aluminium foil tent and line with parchment paper
2. Make large enough to accommodate the fish fillets
3. Spread coleslaw evenly over parchment paper, top with the fish fillets
4. Mix chilli sauce, sesame oil, oyster sauce and grated ginger together
5. Pour over the fillets and sprinkle the bell pepper over all
6. Tightly close foil tent and bake in a hot oven about 220%C for 20 minutes 
5. Open the tent, push the foil to the side and continue to bake for 10 minutes
