2 cups water
1/2 cup soy sauce
1/2 cup white wine vinegar
1/2 cup grated palm sugar or brown sugar
1 teaspoon fish sauce
4 red chillies seeded finely chopped
1 tablespoon grated ginger
1 clove garlic finely chopped
4 x Jewfish cutlets (Mulloway)
2 tablespoons chopped coriander


1. Combine water, soy, vinegar, sugar and fish sauce in a deep fry pan
2. Stir over low heat until sugar has dissolved
3. Stir through chillies, ginger and garlic, boil 10 minutes
4. Reduce heat add fish, cover and simmer 5 minutes
5. Remove lid simmer another 5 minutes until fish is cooked through
6. Stir through coriander and serve with noodles, rice or steamed greens
