1kg baby octopus
1/2 cup red wine
2 cloves crushed garlic
1 tablespoon dried oregano
1 tablespoon extra - virgin olive oil
Finely grated rind and juice of 1 lemon

1 tablespoon olive oil
1 clove garlic crushed
1 tablespoon flat leaf parsley chopped


1. Drop octopus into a saucepan of salted boiling water cook 1 minute Drain
2. Combine in a large glass bowl red wine, garlic, oregano and olive oil
3. Add lemon juice, rind, reserving 1 tablespoon for the dressing
4. Add octopus, cover and refrigerate for 30 minutes
5. Heat a barbecue grill or char grill pan on high until hot
6. In a serving bowl combine dressing ingredients and reserved lemon juice
7. Drain marinade from the octopus and discard
8. Cook octopus turning frequently until crisp  
9. place into serving bowl with the dressing and toss to coat
10. serve with a Greek salad
