Ingredients

Mulloway Cutlets
Sea Salt and freshly ground black pepper
Olive oil
Good handful coriander
Lemons sliced about 3
Good splash of verjuice
White wine
Fish stock

Instructions

1. Season fish cutlets with olive oil and salt and pepper
2. Preheat oven to 180% C
3. Layer a baking dish with lemon slices
4. Place fish on top followed with another layer of lemon slices
5. Sprinkle a layer of coriander on top of fish cutlets and lemon
6. Splash with verjuice
7. Bake in the oven about 20 minutes until cooked through turning once
8. Remove fish from baking dish and keep warm
9. Deglaze baking dish over heat with wine, fish stock, juice from lemon slices
10. Let reduce slightly and stir through some double thick cream
