Ingredients

Choice of fish, prawns, calamari and mussels
1 onion
2 sticks celery (finely chopped)
1 carrot (finely chopped)
3-4 garlic cloves (chopped)
1 cup white wine
400g can diced tomatoes
2 cups fish or chicken stock
Olive oil
1/2 cup parsley (finely chopped)
Salt and pepper to taste
Crusty bread

Instructions

1. Heat olive oil in large pan add onion, celery, carrot and garlic
2. Cook 3-4 minutes on medium heat to soften
3. Add wine, tomatoes and stock simmer 15-20 minutes
4. Add seafood to pan and heat until just cooked.
5. Add parsley and salt and pepper to taste
6. Serve with crusty bread
