Ingredients

2 fillets fish (roughly 500-600g)
butter
shallots
red onion
chives
pepper
salt

Instructions

1. Finely slice the shallots, red onion and chives
2. Place the fillets of fish on some tinfoil
3. Sprinkle the chopped herbs over fish and Season with salt and pepper
4. Then if you wish place some lumps of butter on top
5. Place a second sheet of foil over fish
6. Carefully fold in edges, so fish is in a sealed packet
7. Place foil packet on a baking tray, bake in 180%C oven 10-15 minutes
8. Serve the fish on a bed of rice, with a drizzle of the butter over the top
