Ingredients

4x150g Perch fillets
1 tablespoon water
1 red onion thinly sliced
1/4 cup olive oil
1 red capsicum thinly sliced 2 cloves garlic crushed
600g Sebago potatoes peeled, sliced
Lemon Caper Dressing
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
Salt & pepper to taste
Pinch sugar
1 tablespoon chopped fresh dill
1 tablespoon chopped, drained capers

Instructions

1. Place potatoes and water in a flat-based microwave-proof bowl
2. Cover and cook on high for 5 minutes or until tender and drain
3. Make dressing by combining all ingredients, season with salt & pepper
4. Transfer potatoes to an oven-proof dish with onion and capsicum, pour over oil
5. Add garlic salt and pepper and toss. Place fish on top
6. Drizzle with 1 tablespoon of dressing
7. Cook in hot oven 200%C 15 minutes until fish is tender
8. To serve pour remaining dressing over fish and vegetables
