4 Mangrove Jack portions x 185g each
1/2 cup butter
flour for dusting
1 lemon
1 teaspoon or so white wine
1 tablespoon capers


1. Dredge fish in a bit of flour
2. Heat butter in a skillet.
3. Add the fillets and saute 3 to 5 minutes per side
4. Squeeze lemon over cooked fish
5. Add sherry, capers to pan continue cooking until fish is crisp around edges
6. To serve, spoon the capers over the fillets and serve warm
