Ingredients

1kg of cherry tomatoes
1 tablespoon extra-virgin olive oil
10 garlic cloves, peeled
Sea salt to taste
Black pepper
1/2 cup fresh basil leaves, cut or torn into thirds
750g Mangrove Jack portions

 

Instructions

1. Preheat oven to 425 degrees F
2. Combine tomatoes, oil, garlic, salt, pepper and 1/2 of the basil in a baking pan
3. Roast for 15 minutes
4. Remove tomato mixture from oven and stir
5. Place fish in pan with tomatoes, put back in the oven and continue roasting  
6. Roast 7-10 minutes or until fish no longer translucent, tomatoes start to burst
7. Remove from oven. Divide roasted fish among serving plates
8. Add remaining 1/2 of basil leaves to tomatoes, and spoon mixture over fish
