750g Mangrove Jack cut into 185g portions skin on
Canola or olive oil for cooking
Cornflour for dusting
Citrus Sauce
1 cup orange juice
2 tablespoons low-sodium soy sauce
1-2 tablespoons unsalted butter
Sea salt and fresh ground pepper to taste


1. Preheat medium pan over medium-high heat
2. When the pan is hot, add 1 tablespoon oil to the pan
3. Lightly season fish portions with salt and pepper
4. Dust the skin side with cornflour
5. Carefully add the seasoned fish portions to the hot pan
6. Cook fish for around 3 minutes each side
7. Cook until golden and completely cooked throughout thickest part of the fish
8. Remove cooked fish from pan and let cool slightly

Citrus Sauce
1. In a small pot, combine orange juice and soy sauce
2. Cook over medium heat until reduced by half
3. Reduce heat add butter. Swirl the pot until the butter is incorporated
4. Remove from heat, taste and adjust seasoning with salt and pepper
5. Serve warm
