2 fresh Mangrove Jack fillets
Zest from 1 lemon
3 - 4 sprigs of fresh rosemary
3 Tablespoons of unsalted butter
Extra - virgin olive oil
Sea salt and black pepper to taste


1. Preheat your oven to 180%C
2. Line a baking sheet with foil and drizzle it with some olive oil
3. Sprinkle the fillets on both sides with salt and black pepper
4. Lightly pan fry the fillets skin-side down first for about a minute on each side
5. Then transfer the fillets onto the baking tray
6. Add lemon zest and fresh rosemary leaves removing stalk on top of the fish
7. Drizzle liberally with olive oil, break butter in small pieces, pile on top of fish
8. Bake 15-20 minutes until cooked and brown depending on thickness of fillet
9. Serve immediately with slices of lemon and  favourite salad
