3 x 170 g fresh white crab meat
1/2 cup whole egg mayonnaise
1 tablespoon tomato sauce
1/2 teaspoon Worcestershire sauce
Dash tabasco sauce
1 tablespoon olive oil
2 teaspoons white wine vinegar
3 spring onions, finely chopped
2 tablespoons finely chopped fresh parsley
1/4 cup thick cream, whipped
Salt and freshly ground black pepper
2 ripe avocados


1. Drain crab meat and squeeze out excess juice; discard juice
2. Place meat in a bowl. Cover and refrigerate
3. Whisk together mayonnaise, sauces, olive oil, vinegar, onions and parsley
4. Fold in cream, season with salt and black pepper, to taste cover and chill well
5. Just before serving, fold mayonnaise mixture through the crabmeat
6. Halve avocados remove stone, remove half the avocado pulp from each avocado
7. Chop pulp roughly and fold through the crabmeat mixture
8. Serve mixture piled on top of the avocado halves
9. Garnish with extra black pepper, if desired
Mayonnaise can be made several hours ahead
Crabmeat mixture can also be prepared several hours before use
