Ingredients

4 Kingfish Steaks
2 lemons (one cut into wedges)
Olive Tapenade
(Alternatively purchase readymade tapenade from your supermarket)
20 Kalamata olives, pitted
1 tablespoon capers
3-4 anchovies
1 tablespoon lemon juice
Ground black pepper to taste
4 tablespoons olive oil

Instructions

1. Combine olives, capers, anchovies, lemon juice, olive oil and black pepper
2. place into a food processor and blend into a paste
3. Alternately you can finely chop or use mortar and pestle
4. Pan fry fish on medium-high heat for 3-4 minutes each side until just cooked
5. Serve fish on mashed potato with rocket salad topped with tapenade
