
Ingredients
4 (about 150g each) kingfish steaks
vegetable oil
Ginger and Soy Marinade
3 tablespoons soy sauce
2 tablespoons fresh lemon juice
1 tablespoon fish sauce
3 tablespoons chopped fresh coriander
2 tablespoons grated fresh ginger
1 clove garlic, finely chopped
1 Bird’s eye chilli, sliced
Instructions
For marinade
1. Combine soy, juice, fish sauce coriander, ginger, garlic and chilli
2. Whisk in a bowl to combine
3. Whisk in 2 tablespoons vegetable oil
4. Marinate fish turning to coat
5. Cover set aside, marinate at room temperature 20-30 minutes
6. Heat heavy-based fry pan over medium-high heat
7. Add a little vegetable oil swirl to coat pan heat until shimmering
8. Add fish to pan and cook for 3-4 minutes each side or until just cooked through
9. Remove from pan, cover and stand for 2-3 minutes before serving
