4 (about 150g each) kingfish or other thick fish steaks
salt and freshly ground black pepper
vegetable oil
2 cups watercress sprigs
Lemon and Coriander Vinaigrette
1/4 cup apple cider vinegar
1/4 cup vegetable oil
2 tablespoons fresh lemon juice
2 teaspoons fish sauce
1/2 teaspoon honey
1 shallot, finely chopped
2 tablespoons finely chopped coriander


 For the vinaigrette

1. Place vinegar, oil, juice, fish sauce and honey in small bowl whisk to combine
2. Add shallot and mix to combine
3. Season fish with salt and pepper
4. Heat a little oil in fry pan over medium-high heat
5. Add fish and for cook 3-4 minutes
6. Turn and cook 3-4 minutes longer until fish flakes when tested with  fork
7. Just prior to serving stir in coriander
8. To serve, make a bed of watercress, top with fish and drizzle with vinaigrette
