Large fillet Kingfish
2 teaspoons fish sauce
1/2 cup sweet chilli sauce
Minced fresh coriander
Large Dob butter
Juice of 1 lime
Extra virgin olive oil
Salt and Pepper to season


1. Preheat oven to 190% C
2. Brush a section of foil with olive oil (large enough to wrap a fish parcel)
3. Season fish fillet with salt and pepper
4. Combine fish sauce, sweet chilli sauce, juice and butter to form a paste
5. Place fish fillet onto foil sheet and smear with paste mixture
6. Sprinkle top of fish with minced coriander
7. Wrap to form a parcel and bake in oven until cooked through
