Ingredients

1 whole herring
1 tablespoon (approx) red pesto sauce
3 or 4 green lettuce leaves
1/2 small white onion
6 pitted black olives
Salt and freshly ground black pepper
extra virgin olive oil
freshly chopped basil to garnish

Instructions

1. Preheat oven to 375%F-190%C
2. Lay a large sheet of foil on a baking tray and lightly oil
3. Slit the herring on its underside from the anal fin to the head
4. Remove the innards and wash under cold running water
5. Lay it on a chopping board and make three deep slits on each side
6. Spread half the red pesto sauce on one side of the herring lay it on the foil
7. Spread remaining sauce on other side
8. Loosely wrap foil to form a loose but sealed package
9. Put the tray in the oven for twenty minutes
10. Shred the lettuce and finely slice the onion
11. Mix together and season before spreading on a serving plate
12. Cut the olives in half down through the centre and scatter over the top
13. Drizzle with olive oil
14. Remove Herring from the oven and carefully unwrap. Use a fish slice to lay it on the salad and serve immediately
