4 x 75g fresh herring fillets
4 tablespoons extra-virgin olive oil
2 tablespoons wholegrain mustard
Large bunch basil roughly torn
1 teaspoon clear honey
1 lemon grated zest and juice


1. Heat grill to highest setting
2. Rinse fish under running cold water to dislodge any loose scales
3. Brush with a little of the oil and season lightly
4. Grill 6-8 mins, or until cooked
5. Eye should be white, skin well browned and the flesh firm and opaque

To make the dressing
1. whisk mustard, basil, honey, lemon zest and juice, remaining oil and season
2. Once the fish is cooked, spoon the dressing over and serve
